Pierogi are filled dumplings of Central and Eastern European cuisine, made by wrapping dough around a savoury or sweet filling and cooking in boiling water.
INGREDIENTS
300 g wheat flour
pinch of salt
125 ml boiling water
1 egg
20 g butter
PREPARATION:
Pour the flour into a bowl, add salt. Put butter in boiling water and melt, gradually pour into flour, mixing everything with a spoon.
In the meantime, add a beaten egg and use all ingredients to knead a smooth dough (knead for around 6-7 mins).
Wrap in foil and let stand for about 30 minutes.
Divide the dough into 4 parts and roll out thin (about 2-3 mm), covering the board with flour if dough is sticking.
Cut small circles out (use cup or glass) stretch them a little in your fingers, then apply filling (we have use blueberries and cherries- remember to remove the pits from cherries) . Fold in half and stick the edges tightly together, place on the board.
In a big pot, boil lightly salted water and put in the first batch of dumplings (10-15)
Reboil (on medium heat) for about 2 minutes counting from the time dumplings surfaced (until the dough is soft).
The length of cooking depends on the thickness of the dough. Pick out with a slotted spoon on a plate and ENJOY!
